Mint Aero Chocolate Brownies – Chocolate and peppermint flavoured brownies with a surprise Mint Aero Centre ❤

BROWNIES were made for Friday’s – a delicious chocolate indulgence to celebrate the beginning of the weekend! I always look at the ingredients to make brownies and think, yes, this amount of chocolate is going to make for an epically good brownie. The addition of peppermint extract to the brownie mix really adds a whole new dimension, a whole new brownie experience some might say. It brings a freshness to the bake and cuts through the super chocolatey base so well that the second brownie goes down even better than the first. Trust me on this.

I think I’ve always liked the chocolate and mint combo, one of my favourite chocolate indulgences are After Eight mint thins – YUMMM! At Christmas time I can 100% justify eating a whole box of these whilst winning a casual game of Monopoly. Seen as it’s not quite Christmas yet let’s indulge in these minty delights instead! Mint Aero’s are awesome, fact. Possibly even better than the original Aero, in my opinion anyway. What I do know though is that Mint Aero Chocolate Brownies are mouth-wateringly good, fact.

Fudgy brownies are the best. Fudgy brownies with Mint Aero are better. Fudgy brownies with Mint Aero that are easy to make? Surely a winner for your next baking adventure? I think so 😉

I hope you all have a lovely weekend and enjoy some delicious baking!

Ingredients

  • 225g dark chocolate
  • 225g unsalted butter
  • 4 medium eggs
  • 300g caster sugar
  • 120g plain flour
  • 50g cocoa powder
  • 1 tsp peppermint extract
  • 1 large bar of Mint Aero ( or any unbranded version!)

Optional Topping:

  • 50g icing sugar
  • Green Food colouring

Recipe

1 – Preheat the oven to 160c fan/180c/ Gas Mark 4 and line a 12×9 inch Traybake tin with baking paper and set aside.

2 – Melt the chocolate and butter together. Either in the microwave in short 30 second blasts or in a bowl over a pan of boiling water. Set aside to cool a little whilst you whip up the eggs.

3 – In a separate bowl whisk the sugar and eggs until very pale, thick and doubled in size.

4 – Add in the peppermint extract and whisk briefly again. Gently fold in the melted chocolate mix.

5 – Sieve the flour and cocoa into the chocolate mix and fold through gently until just combined.

6 – Pour into the tray. Break up the Mint Aero bar into the individual squares. Push 16 squares into the brownie mix, evenly spaced as you’ll cut either side of where you place them.

7 – Bake for 25 – 30 minutes – you’ll know when the brownies are ready when they start to show cracks on the top. Check them and give them a few more minutes if needed. They should still have a little wobble in the middle when done. Allow to cool completely in the tin.

8 – Cut into desired portions, I cut into 16 squares. As an optional extra you can make up some green icing to drizzle over the top. 50g icing sugar mixed with 1 tbsp water and some green food colouring.
